Making healthy dinners are pretty easy. Making healthy lunches is where I always drop the ball. This roasted vegan sandwich is one of my go-tos because all the components can be made ahead—and they can all be reused in other dishes!

The tomatoes are roasted off with garlic and turned into a broth, instead of a chunky puree, and slivered onions and a cracked whole egg add texture to this traditionally smooth soup.
